Ingredients
2 slices sourdough bread, toasted
2 cloves of garlic, whole
1 oz walnuts, toasted (preferably pine nuts, but use what you have)
5 oz parmigiano reggiano, chunks
1/2 cup sun-dried tomato in olive oil
1/2 cup fresh basil, tender stem and leaf
1/2 cup extra virgin olive oil
2 oz mozzarella cheese
3 oz sliced turkey
Directions
1. In a food processor or blender, add garlic, parmigiano reggiano, walnuts, sun-dried tomato, and basil.
2. Process the ingredients by pulsing into a paste.
3. Slowly add olive oil into the paste until it becomes smooth and creamy (consistency: creamy peanut butter).
4. In a pan set to medium low, toast your bread with a little olive oil.
5. Spread pesto onto each slice of bread.
6. Add a slice of mozzarella onto each slice of bread and continue to toast until slightly melted.
7. Remove from the pan and add sliced turkey to make your sandwich.
8. Feel free to add arugula to the sandwich or a side salad to accompany this simple sandwich.
